Production of pectinases by yeasts: a review

The biotechnological potential of pectynolitic enzymes has drawn the attention of several researchers around the world due to their importance as biological catalysts in several industrial processes. Under economic and industrial points of view, the extracellular enzymes from yeasts are preferable among the others pectinases sources, since they can grow from low-cost substrates and high production of these enzymes can be ensured under controlled conditions. Thus, this review has the goal of divulge the economical and industrial potential of yeasts, aiming to stimulate programs of selection and screening of microbial resources, in a wide program of scientific, technological, economic and environmental development that could aid to create new processes or biotechnological products.
